What’s Growing in Your Yard?

Samara seeds come from the maple tree, sometimes known as ‘helicopters,’ ‘whirlybirds,’ or ‘twirling jennies.’ Did you know they are edible?

Roasted Samara

  • Samara Seeds (as many as you can find!)

  • Olive Oil

  • Cinnamon

  • Swerve Brown Sugar Substitute

    OR

  • Garlic Salt

  • Black Pepper

    OR

  • Any other healthy flavors you can dream up

     

INSTRUCTIONS:

Peel to remove seeds. Soak seeds in filtered water overnight. Drain. Place seeds on stainless steel baking sheet. Drizzle with Olive Oil. Season the seeds on the left side of the pan with cinnamon. Season the rest with garlic and black pepper. Bake on low heat (no more than 200 degrees) for 2 hours. Taste one. If they are bitter, cook until they are no longer bitter. These can also be dehydrated instead of baked. Great for snacking! Experiment with different flavors until you find one you like!

Soaking the seeds helps remove the lectins. Lectins are plant proteins that bind to carbohydrates. These have no nutritional value, but are produced by the plant to protect it from being eaten. Plants, like people, want to survive, too!
